This vintage cheese made with selected raw ewe’s milk has been aged for more than 12 months and refined with pimentón (smoked paprika) adding a spicy flavour and aroma. The pimentón with which it matures in its rind gives it a a very appetizing flavour for the lovers of this spice.

Pimentón is one of the most appreciated condiments in Spanish traditional cooking. It has antioxidant effects and produces an increase in defences against free radicals. It helps to lower cholesterol and triglycerides, among other beneficial effects. Despite being a sweet pimentón, when combined with the maturation and flavour of ewe’s cheese, it acquires a slight spicy flavour, which will remain on your palate.
