Liberalia Pajarita Blanco is a white wine made exclusively with Verdejo grapes grown in 25 year old vineyards.

The grape arrives early at the winery to make the most of the cooler morning temperatures. The bunches and grapes that are not at their optimum ripeness are removed.

The process to separate the clearest and most transparent part of the must from the solid parts is long, increasing the contact of substances with the must which enhances the fruity aroma of the wine.

Fermentation takes place at low temperatures, 14-18ºC, which helps to maintain and intensify the varietal character and volume contribution in the mouth.

After fermentation the wines are kept in contact with the fine lees for a period of time, to increase the structural characteristics of the wine, providing fatty acids and more wide and glyceric mouthfeelings. This aging on lees makes this a white wine with greater longevity.
