This vintage/Grand Reserve Pago “Los Vivales” Cheese is made with 100% raw ewe’s milk.
It is a cheese with a maturation of more than 16 months, homogeneous and firm, with a clean cut, few mechanical eyes and a texture that is still melting, despite its age. It has a strong flavour, very aromatic, elegant and with great persistence in the mouth.

Vintage cheese with a slow and constant ripening of more than 16 months. Firm cheese with uniform strawy yellow colour, with a clean cut at room temperature, few mechanical eyes and a texture still melting in mouth, in spite of its age, but with a very nice strong and elegant flavour, without harshness , intense aromatic with fruity hints (dry fruits) and with long persistence in mouth. It is a very balanced cheese in taste, aroma and persistence.
Rind: Mineral oil for food use, aqueous dispersion of polyvinyl acetate.
Leave at room temperature for 10 minutes before consumption.
